A healthy and simple ahi tuna boat recipe

Lately I'm obsessed with food vloggers like @emilymariko and @sweetsimplevegan on Instagram/Tik Tok. They have encouraged me to eat light and simple, which has complemented my fitness (and gut health) journey perfectly. If you’re craving an easy but delicious ahí tuna lunch like I was, here’s your answer– tuna cukes are the easiest lunch or dinner you’ll ever make!
Ahi Tuna Cuke Boats
Prep Time: 10 min
Servings: 1
Ingredients
4 cucumbers
1/2 lb sushi grade tuna
2 tbs soy sauce
2 tbs ginger dressing
2 tbs yuzu juice
1 tbs Sriracha (or Japanese pepper paste for additional spice)
Scallions and jalepenos for taste (optional)
Black sesame seeds
Directions
Chop off ends of cucumber and slice in half lengthwise
Hollow out cucumber slices with a spoon to make boats
Dice sushi grade tuna, scallions, and jalepenos and mix them together
Mix together with soy sauce, ginger dressing, yuzu juice, and hot sauce (or Japanese pepper paste)
Spoon tuna mixture into the boats and sprinkle sesame seeds on top
